  • 2 cups bell peppers, chopped

  • 1 cup spinach, chopped
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup marinara sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook lasagna noodles according to package directions; drain.
  3. In a large skillet, sauté zucchini, bell peppers, mushrooms, and spinach until tender.
  4. In a baking dish, layer noodles, sautéed vegetables, ricotta, marinara sauce, and mozzarella.
  5. Repeat layers until ingredients are used up, finishing with mozzarella on top.
  6. Cover with foil and bake for 25 minutes.
  7. Remove foil and bake for an additional 15 minutes, until cheese is bubbly and golden.
  8. Let cool for 10 minutes before serving.
