- 9 lasagna noodles
- 2 cups zucchini, sliced
- 2 cups bell peppers, chopped
- 1 cup mushrooms, sliced
- 1 cup spinach, chopped
- 2 cups ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 cup marinara sauce
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Preheat your oven to 375°F (190°C).
- Cook lasagna noodles according to package directions; drain.
- In a large skillet, sauté zucchini, bell peppers, mushrooms, and spinach until tender.
