  • 1/2 cup confectioners’ sugar
  • 2 tablespoons lemon zest
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup additional confectioners’ sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and 1/2 cup confectioners’ sugar until smooth.
  3. Stir in the lemon zest and vanilla extract.
  4. Gradually blend in the flour and salt.
  5. Roll the dough into small balls and place them on ungreased cookie sheets.
  6. Bake for 12-15 minutes, or until gently browned.
  7. Allow to cool slightly, then roll in confectioners’ sugar while still warm.
  8. Let cool completely on a wire rack.
