Loaded Baked Potato Soup

Ingredients

  • 4 large russet potatoes
  • 1/2 cup diced onion
  • 4 slices turkey bacon
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions

Instructions

  1. Peel and dice the potatoes into small cubes.
  2. In a large pot, cook the turkey bacon until crispy, remove and crumble.
  3. Add the diced onion to the pot and sauté until translucent.
  4. Add the potatoes and chicken broth. Bring to a boil and simmer until potatoes are tender.
  5. Stir in the heavy cream, garlic powder, salt, and pepper.
  6. Use an immersion blender to puree the soup to your desired consistency.
  7. Top with cheddar cheese, crumbled turkey bacon, and green onions before serving.

Notes

  • For a vegetarian option, omit the turkey bacon and use vegetable broth.
