- 4 large russet potatoes
- 6 slices turkey bacon
- 1 medium onion
- 4 cups chicken broth
- 2 cups heavy cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 2 tablespoons chives
- Preheat the oven to 400°F (200°C). Prick potatoes with a fork and bake for about 1 hour until tender.
- In a large pot, cook turkey bacon until crisp. Remove and crumble.
- In the same pot, sauté onion until translucent.
- Peel and dice the baked potatoes, and add them to the pot.
- Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes.
- Stir in heavy cream, garlic powder, onion powder, and smoked paprika. Simmer for another 10 minutes.
- Use an immersion blender to blend the soup until smooth, or leave some chunks for texture.
- Stir in cheddar cheese until melted. Serve topped with sour cream, crumbled bacon, and chives.
