  • 4 large russet potatoes
  • 6 slices turkey bacon
  • 1 medium onion
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 tablespoons chives

Instructions

  1. Preheat the oven to 400°F (200°C). Prick potatoes with a fork and bake for about 1 hour until tender.
  2. In a large pot, cook turkey bacon until crisp. Remove and crumble.
  3. In the same pot, sauté onion until translucent.
  4. Peel and dice the baked potatoes, and add them to the pot.
  5. Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  6. Stir in heavy cream, garlic powder, onion powder, and smoked paprika. Simmer for another 10 minutes.
  7. Use an immersion blender to blend the soup until smooth, or leave some chunks for texture.
  8. Stir in cheddar cheese until melted. Serve topped with sour cream, crumbled bacon, and chives.

  • For a lighter version, use turkey bacon and low-fat cream.
  • This soup freezes well; store in airtight containers.
