  • 4 large russet potatoes
  • 6 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup green onions, sliced
  • salt to taste

Instructions

  1. Begin by peeling and dicing the russet potatoes.
  2. In a large pot, cook turkey bacon until crispy, then remove and crumble.
  3. In the same pot, sauté onions and garlic until softened.
  4. Add the potatoes and chicken broth, bring to a boil, and then simmer until the potatoes are tender.
  5. Stir in heavy cream, crumbled bacon, and chicken ham, and heat through.
  6. Blend the mixture with an immersion blender for a smoother texture, or leave it chunky as preferred.
  7. Stir in cheddar cheese until melted. Season with salt and pepper.
  8. Serve warm, garnished with green onions and extra cheese if desired.

Notes

  • For an extra kick, add a pinch of cayenne pepper.
  • This soup can be made ahead and reheated on the stovetop.
