  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese

  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1/2 cup sliced jalapeños

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and pierce the russet potatoes with a fork, then rub them with olive oil and sprinkle with salt and pepper.
  3. Bake the potatoes directly on the oven rack for about 45 minutes, or until tender.
  4. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat and stir in the taco seasoning according to package instructions.
  5. Once the potatoes are cooked, remove them from the oven and let them cool slightly.
  6. Slice the baked potatoes open lengthwise and fluff the insides with a fork.
