  • 6 slices turkey bacon
  • 1 cup black beans, rinsed and drained
  • 1 cup corn
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 avocado, sliced
  • 1/4 cup chopped green onions

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork and bake for 45-60 minutes until tender.
  3. While the potatoes bake, cook the turkey bacon in a skillet until crispy.
  4. Prepare the toppings: rinse the black beans, drain the corn, shred the cheese, and slice the avocado.
