Loaded Potato Taco Bowl

  • 2 large russet potatoes
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • 1 cup cooked ground beef or turkey
  • 1 taco seasoning packet
  • ½ cup diced green onions
  • ½ cup diced tomatoes
  • 1 cup lettuce, shredded
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash the russet potatoes and pierce with a fork. Rub with olive oil and sprinkle with salt. Bake for 45 minutes until tender.
  3. In a skillet, brown the ground beef or turkey. Add the taco seasoning according to package instructions.
  4. Once the potatoes are done, let them cool slightly, then cut them in half and scoop out some of the insides.
  5. Fill the potato halves with ground meat, cheese, and other toppings as desired.
  6. Top with sour cream, green onions, tomatoes, and lettuce. Serve warm.
