- 2 large russet potatoes
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- 1 cup cooked ground beef or turkey
- 1 taco seasoning packet
- ½ cup diced green onions
- ½ cup diced tomatoes
- 1 cup lettuce, shredded
- 2 tablespoons olive oil
- Preheat the oven to 425°F (220°C).
- Wash the russet potatoes and pierce with a fork. Rub with olive oil and sprinkle with salt. Bake for 45 minutes until tender.
- In a skillet, brown the ground beef or turkey. Add the taco seasoning according to package instructions.
- Once the potatoes are done, let them cool slightly, then cut them in half and scoop out some of the insides.
- Fill the potato halves with ground meat, cheese, and other toppings as desired.
- Top with sour cream, green onions, tomatoes, and lettuce. Serve warm.
