Marshmallow Whip Cheesecake

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups mini marshmallows
  • 1 cup cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups heavy whipping cream
  • 1/4 cup chocolate shavings (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs and melted butter until well mixed.
  3. Press the mixture firmly into the bottom of a springform pan to form the crust.
  4. Bake for 10 minutes, then allow to cool.
  5. In a large bowl, combine marshmallows, cream cheese, powdered sugar, and vanilla. Beat until smooth.
  6. In another bowl, whip the heavy cream until stiff peaks form.
  7. Fold the whipped cream into the marshmallow mixture until well combined.
  8. Pour the cheesecake filling over the cooled crust and smooth the top.
  9. Refrigerate for at least 4 hours or until set.
  10. Before serving, sprinkle chocolate shavings on top.

Notes

  • Use fresh mini marshmallows for best results.
  • Allow the cheesecake to set overnight for optimal texture.
