Mediterranean Quesadillas

A quick, flavorful, and healthy family meal that combines the essence of Mediterranean cuisine in a quesadilla.

Ingredients

  • 4 large flour tortillas
  • 1 cup feta cheese, crumbled
  • 1 cup spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup olives, sliced
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Layer half of a tortilla with feta, spinach, sun-dried tomatoes, and olives.
  3. Fold the tortilla in half and cook until golden brown on both sides.
  4. Repeat with remaining tortillas and filling.
  5. Slice and serve warm.
