- 2 pounds chuck roast, cut into 1-inch cubes
- 3 tablespoons vegetable oil
- 4 cups beef broth
- 4 large carrots, sliced
- 4 large potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 bay leaves
- Salt to taste
- Pepper to taste
- In a large pot, heat the vegetable oil over medium-high heat.
- Add the beef and brown on all sides.
- Add the onions and garlic, and sauté until softened.
- Stir in the tomato paste, and cook for another 2 minutes.
- Add the broth, carrots, potatoes, thyme, rosemary, and bay leaves. Bring to a boil.
- Reduce heat, cover, and let simmer for 1.5 to 2 hours, or until the beef is tender.
- Remove bay leaves, and season with salt and pepper before serving.
Notes
- For thicker stew, you can add a cornstarch slurry towards the end of cooking.
- Serve with crusty bread for a complete meal.
