Old Fashioned Beef Stew

A classic recipe for hearty old fashioned beef stew, perfect for cold days and family dinners.

Ingredients

  • 2 pounds chuck roast, cut into 1-inch cubes
  • 3 tablespoons vegetable oil
  • 4 cups beef broth
  • 4 large carrots, sliced
  • 4 large potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium-high heat.
  2. Add the beef and brown on all sides.
  3. Add the onions and garlic, and sauté until softened.
  4. Stir in the tomato paste, and cook for another 2 minutes.
  5. Add the broth, carrots, potatoes, thyme, rosemary, and bay leaves. Bring to a boil.
  6. Reduce heat, cover, and let simmer for 1.5 to 2 hours, or until the beef is tender.
  7. Remove bay leaves, and season with salt and pepper before serving.

Notes

  • For thicker stew, you can add a cornstarch slurry towards the end of cooking.
  • Serve with crusty bread for a complete meal.
