  • 1 cup Kalamata olives, pitted and sliced
  • 1/2 cup red onion, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in salted water until tender. Drain and let cool.
  2. Once cooled, cut the potatoes into bite-sized pieces.
  3. In a large bowl, combine the potatoes, olives, red onion, cherry tomatoes, and feta cheese.
  4. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Refrigerate for at least 30 minutes before serving.
