  • 1/2 cup turkey bacon, chopped
  • 1/2 cup chicken ham, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup green onions, sliced

Instructions

  1. Peel and dice the potatoes.
  2. In a large pot, cook turkey bacon until crispy, then add onion and garlic.
  3. Add the diced potatoes and chicken broth to the pot.
  4. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  5. Puree the soup with an immersion blender until smooth.
  6. Stir in the heavy cream, salt, and pepper.
