1 pound beef tenderloin
1 tablespoon olive oil
1 cup mushrooms, finely chopped
2 cloves garlic, minced
1 teaspoon fresh thyme, chopped
1 package puff pastry, thawed
1 egg (for egg wash)
Salt and pepper to taste
Instructions
Preheat the oven to 400°F (200°C).
Heat olive oil in a pan and sear the beef tenderloin until browned. Remove and let cool.
In the same pan, add mushrooms, garlic, thyme, salt, and pepper. Sauté until moisture evaporates. Let cool.
Roll out puff pastry and cut into squares. Place a spoonful of mushroom mixture and a piece of beef in the center.
Fold the pastry over and seal edges, then brush with beaten egg.
Bake for 20-25 minutes until golden brown. Serve warm.
