Perfectly Moist Pumpkin Loaf

A warm and flavorful pumpkin loaf that is sure to be a hit on any occasion.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1/4 cup water

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. In a bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, beat together sugars and oil until smooth. Add eggs one at a time, mixing well after each addition.
  4. Stir in pumpkin and water. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  5. Pour the batter into the prepared loaf pan and bake for 60-70 minutes, or until a toothpick comes out clean.
  6. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • For an extra moist loaf, add a few tablespoons of yogurt.
  • Experiment with adding chocolate chips for a different flavor.
