  • 4 fillets salmon
  • 1 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 2 tablespoons cornstarch
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 teaspoon ginger, grated
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped green onions

Instructions

  1. In a small saucepan, mix pineapple juice, brown sugar, soy sauce, garlic, ginger, and black pepper.
  2. Bring the mixture to a boil, stirring occasionally.
  3. Mix cornstarch with a little water to make a slurry and add to the boiling mixture, stirring until thickened.
  4. Preheat grill or oven to medium heat.
  5. Brush salmon with olive oil and place on the grill or in a baking dish.
  6. Cook for about 6 minutes on each side or until salmon flakes easily with a fork.
  7. Brush the cooked salmon with the glaze and serve hot, garnished with green onions.
