Pioneer Woman Potato Soup

A deliciously comforting potato soup with a creamy texture and a twist of turkey bacon.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 3 slices turkey bacon, cooked and crumbled
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • Salt to taste
  • Ground black pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onion and sauté until translucent.
  2. Add the diced potatoes and chicken broth. Bring to a boil and then simmer until the potatoes are tender.
  3. Once potatoes are cooked, use a potato masher to mash them a little for a creamy texture.
  4. Stir in the heavy cream, turkey bacon, garlic powder, salt, and pepper. Heat through.
  5. Serve hot and enjoy!

Notes

  • For extra creaminess, blend a portion of the soup.
  • Feel free to add cheese for more flavor.
