Pioneer Woman Potato Soup Recipe

A delicious and creamy potato soup made with turkey bacon that will warm you up on cold days.

Ingredients

  • 4 large russet potatoes
  • 1/2 cup chopped onion
  • 4 slices turkey bacon
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Peel and dice the potatoes.
  2. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  3. In the same pot, sauté the onions until translucent.
  4. Add the diced potatoes and chicken broth. Bring to a boil and then simmer until potatoes are tender.
  5. Stir in the cream, garlic powder, salt, and pepper. Simmer for an additional 5 minutes.
  6. Top with crumbled turkey bacon before serving.

Notes

  • For a thicker soup, mash some of the potatoes.
  • Add extra veggies like carrots or celery if desired.
