- 1 pound chicken breast, diced
- 1 can (15 oz) pumpkin puree
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 cup chicken broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 cup corn, frozen or canned
- In a large pot, heat olive oil over medium heat and add diced chicken, cooking until browned.
- Add pumpkin puree, black beans, diced tomatoes, chicken broth, chili powder, cumin, garlic powder, onion powder, salt, and black pepper, stirring to combine.
- Bring to a simmer, then reduce heat and let it cook for 25-30 minutes, stirring occasionally.
- In the last 5 minutes, stir in corn.
- Serve hot, garnished with your favorite toppings.
