Pumpkin Chicken Chili

A delicious blend of pumpkin and chicken in a hearty chili.

  • 1 pound chicken breast, diced
  • 1 can (15 oz) pumpkin puree
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup corn, frozen or canned

Instructions

  1. In a large pot, heat olive oil over medium heat and add diced chicken, cooking until browned.
  2. Add pumpkin puree, black beans, diced tomatoes, chicken broth, chili powder, cumin, garlic powder, onion powder, salt, and black pepper, stirring to combine.
  3. Bring to a simmer, then reduce heat and let it cook for 25-30 minutes, stirring occasionally.
  4. In the last 5 minutes, stir in corn.
  5. Serve hot, garnished with your favorite toppings.

Notes

  • Can be topped with sour cream or cilantro for added flavor.
  • Adjust spices according to your heat preference.
