Pumpkin & Gouda Stuffed Shells

A comforting and delicious dish perfect for autumn evenings, featuring the rich flavors of pumpkin and creamy Gouda.

  • 12 large jumbo pasta shells
  • 1 cup pumpkin puree
  • 1 cup shredded Gouda cheese
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups marinara sauce

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.
  3. In a mixing bowl, combine pumpkin puree, Gouda, ricotta, Parmesan, garlic powder, nutmeg, salt, and pepper until well blended.
  4. Stuff each cooked shell with the pumpkin and cheese mixture.
  5. Spread 1 cup of marinara sauce on the bottom of a baking dish.
  6. Arrange the stuffed shells in the baking dish and top with the remaining marinara sauce.
  7. Cover with aluminum foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 10 minutes until bubbly and golden.
  9. Let cool for a few minutes before serving.

Notes

  • This dish can be made ahead of time and refrigerated before baking.
  • For extra creaminess, add more Gouda cheese on top before baking.
