Quick and Easy Twice Baked Potatoes

A delightful twist on a classic dish featuring turkey bacon and creamy potato filling.

  • 4 large russet potatoes
  • 4 slices turkey bacon
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup green onions, chopped
  • 1/4 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and poke holes in potatoes, then bake for 45-60 minutes until tender.
  3. Meanwhile, cook turkey bacon in a skillet until crispy, then crumble.
  4. Once potatoes are cool, slice them in half and scoop out the insides.
  5. In a bowl, mix the potato insides with sour cream, cheese, green onions, milk, garlic powder, onion powder, salt, and pepper.
  6. Stir in crumbled turkey bacon and fill the potato skins with the mixture.
  7. Bake stuffed potatoes for an additional 15-20 minutes until heated through.

Notes

  • For a spicier version, add jalapeños to the filling.
  • Feel free to substitute regular bacon if preferred.
