Quick Salmon & Spinach Pasta

A quick and healthy salmon and spinach pasta dish that’s perfect for weeknight dinners.

Ingredients

  • 8 ounces pasta
  • 2 tablespoons olive oil
  • 1 pound salmon fillets
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Boil the pasta according to package directions.
  2. While the pasta is cooking, heat olive oil in a pan over medium heat.
  3. Add the salmon and cook until it flakes easily.
  4. Stir in the garlic and spinach, cooking until spinach has wilted.
  5. Combine the pasta with the salmon mixture and season with salt and pepper.
  6. Serve with a sprinkle of Parmesan cheese.

Notes

  • Make sure to not overcook the salmon.
  • Feel free to add other vegetables.
