  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium zucchini, diced
  • 1 medium eggplant, diced
  • 1 bell pepper, diced
  • 2 cups diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the zucchini, eggplant, and bell pepper. Cook for about 5 minutes until they start to soften.
  3. Stir in the diced tomatoes, vegetable broth, thyme, basil, salt, and pepper.
  4. Bring the soup to a boil, then reduce the heat and simmer for 20-30 minutes.
  5. Adjust seasoning as needed before serving.
