Roasted Potato Salad Recipe

A delicious twist on classic potato salad featuring turkey bacon and chicken ham.

  • 2 pounds baby potatoes
  • 4 strips turkey bacon
  • 1 cup diced chicken ham
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and cut the baby potatoes in half, then toss them with olive oil, salt, and pepper.
  3. Spread potatoes on a baking sheet and roast for 25-30 minutes until golden brown.
  4. While the potatoes are roasting, cook the turkey bacon in a pan until crispy, then chop.
  5. In a large bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, and mix well.
  6. Once the potatoes are done, let them cool for a few minutes, then add to the bowl with the dressing along with chicken ham, turkey bacon, and parsley.
  7. Toss everything together until well coated and serve warm or chilled.

Notes

  • For a healthier option, use Greek yogurt instead of mayonnaise.
  • Add chopped green onions for extra flavor.
