Roasted Sweet Potato Rounds

Deliciously roasted sweet potato rounds topped with crispy turkey bacon make for an easy and healthy appetizer or snack.

  • 2 medium sweet potatoes
  • 6 slices turkey bacon
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the sweet potatoes into rounds and place them in a bowl.
  3. Add olive oil, paprika, salt, and pepper to the sweet potatoes and toss to coat.
  4. Spread the sweet potato rounds on a baking sheet in a single layer.
  5. Bake for 20 minutes, flipping halfway through.
  6. While the sweet potatoes bake, cook the turkey bacon in a skillet until crispy.
  7. Remove the sweet potatoes from the oven and top each round with a piece of turkey bacon.
  8. Return to the oven for another 5 minutes to warm the bacon.
  9. Serve warm and enjoy!

Notes

  • For added flavor, try sprinkling some cheese on top before the final bake.
