Salmon Spinach Pasta Dish

A quick and flavorful salmon spinach pasta that makes for a perfect weeknight meal.

Ingredients

  • 8 ounces pasta
  • 2 tablespoons olive oil
  • 1 pound salmon fillet
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the pasta according to package instructions.
  2. In a skillet, heat olive oil over medium heat.
  3. Add the salmon and cook until fully cooked through, about 5-6 minutes per side.
  4. Remove the salmon and set aside. In the same skillet, add garlic and spinach, cooking until spinach is wilted.
  5. Pour in heavy cream and parmesan, stirring to combine.
  6. Flake the salmon and return to the skillet. Mix well.
  7. Combine the sauce with the cooked pasta and stir.
  8. Season with salt and pepper to taste before serving.

Notes

  • For a lighter version, use whole grain pasta.
  • Can substitute chicken for salmon if preferred.
