Salmon Spinach Pasta Dish

  • 8 ounces fettuccine pasta
  • 2 tablespoons olive oil
  • 1 pound salmon fillets
  • 3 cups fresh spinach
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook the fettuccine pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season salmon with salt and pepper, then add to the skillet. Cook for about 5-7 minutes per side, or until cooked through. Remove salmon and flake into pieces.
  3. In the same skillet, add garlic and sauté for about 1 minute. Then add the spinach and cook until wilted.
  4. Add flaked salmon and cooked pasta to the skillet; toss to combine. Sprinkle with Parmesan cheese before serving.
