- 8 ounces fettuccine pasta
- 2 tablespoons olive oil
- 1 pound salmon fillets
- 3 cups fresh spinach
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- Cook the fettuccine pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season salmon with salt and pepper, then add to the skillet. Cook for about 5-7 minutes per side, or until cooked through. Remove salmon and flake into pieces.
