Salmon Spinach Pasta Dish

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 pound salmon fillet
  • 4 cups fresh spinach
  • 1 teaspoon lemon juice
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute.
  3. Add the salmon fillet, cooking for about 4-5 minutes per side or until cooked through. Remove from skillet and flake.
  4. Add the spinach to the skillet and cook until wilted.
  5. Combine the pasta, flaked salmon, and spinach in a large bowl. Drizzle with lemon juice and season with salt and pepper.
  6. Toss to combine and serve warm.
