Shepherd’s Pie Baked Potato

A delightful twist on shepherd’s pie, featuring a baked potato filled with rich flavors, perfect for a comforting meal.

  • 4 large potatoes
  • 1 pound ground lamb or beef
  • 1 onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons butter
  • 1/4 cup milk

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the potatoes and poke holes in them with a fork. Bake for about 45-60 minutes until tender.
  3. In a skillet, brown the ground lamb or beef over medium heat. Add onions, carrots, and garlic, and cook until softened.
  4. Stir in peas, tomato paste, beef broth, Worcestershire sauce, and thyme. Simmer for 10 minutes.
  5. Once the potatoes are done, remove from the oven and slice them in half. Scoop out some flesh to create space for the filling.
  6. Mix the scooped potato with butter and milk, then fill the potato skins with the meat mixture.
  7. Top with cheddar cheese and return to the oven for an additional 10-15 minutes, until cheese is melted and bubbly.
  8. Serve hot and enjoy!

  • Feel free to substitute any ground meat or add additional vegetables according to your taste.
  • Can be made ahead and heated up later; just reheat in the oven for best results.
