- 4 large potatoes
- 1 pound ground lamb or beef
- 1 onion, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 cup frozen peas
- 2 tablespoons tomato paste
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1/2 cup shredded cheddar cheese
- 2 tablespoons butter
- 1/4 cup milk
- Preheat your oven to 400°F (200°C).
- Scrub the potatoes and poke holes in them with a fork. Bake for about 45-60 minutes until tender.
- In a skillet, brown the ground lamb or beef over medium heat. Add onions, carrots, and garlic, and cook until softened.
- Stir in peas, tomato paste, beef broth, Worcestershire sauce, and thyme. Simmer for 10 minutes.
- Once the potatoes are done, remove from the oven and slice them in half. Scoop out some flesh to create space for the filling.
- Mix the scooped potato with butter and milk, then fill the potato skins with the meat mixture.
- Top with cheddar cheese and return to the oven for an additional 10-15 minutes, until cheese is melted and bubbly.
- Serve hot and enjoy!
