Short Rib and Chorizo Chili Recipe

Ingredients

  • 2 pounds short ribs
  • 1 pound chorizo sausage
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 cans diced tomatoes
  • 2 cans kidney beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon paprika
  • 2 cups beef broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the short ribs on all sides. Remove and set aside.
  2. In the same pot, cook the chorizo until browned. Add onions and garlic, cooking until softened.
  3. Stir in tomatoes, kidney beans, chili powder, cumin, paprika, and beef broth.
  4. Add the short ribs back to the pot, bring to a boil, then reduce heat and simmer for 2 hours.
  5. Season with salt and pepper before serving.
