  • 1 cup mayonnaise

  • 1 cup chopped celery
  • 1/2 cup chopped red onion
  • 4 slices cooked turkey bacon, crumbled
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Boil the potatoes in a large pot until tender, about 15-20 minutes. Drain and let cool.
  2. Once cooled, chop the potatoes into bite-sized pieces and place in a large mixing bowl.
  3. In a separate bowl, mix together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper.
  4. Add the celery, red onion, turkey bacon, and parsley to the potatoes.
