Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup corn, canned or frozen
  • 1 cup black beans, drained and rinsed
  • 1 red bell pepper, diced
  • ½ cup red onion, diced
  • 1 avocado, diced
  • ½ cup chopped cilantro
  • 4 strips turkey bacon, cooked and crumbled
  • ½ cup shredded cheese (cheddar or Mexican blend)

Instructions

  1. In a large bowl, combine the shredded chicken, corn, black beans, red bell pepper, red onion, avocado, and cilantro.
  2. Toss the ingredients until well mixed.
  3. Add the crumbled turkey bacon and shredded cheese, then gently fold them into the salad.
  4. In a separate bowl, whisk together your dressing ingredients.
  5. Drizzle the dressing over the salad and toss to coat.
  6. Serve immediately or chill before serving.

Notes

  • For extra crunch, add some tortilla strips on top before serving.
