  • 4 salmon fillets
  • 4 ounces turkey bacon, chopped
  • 1 cup spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup bell pepper, diced
  • 2 green onions, sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon lemon juice

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the turkey bacon until crispy, then remove and set aside.
  3. In the same skillet, sauté the spinach and bell pepper until soft.
  4. In a bowl, mix the cooked turkey bacon, sautéed veggies, cream cheese, garlic powder, and lemon juice.
  5. Make a pocket in each salmon fillet and fill with the mixture.
  6. Place the stuffed salmon on a baking sheet and bake for 20-25 minutes or until cooked through.
