Super Green Sheet Pan Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups chopped kale
  • 1 cup chopped spinach
  • 1 cup peas
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix olive oil, onion, and garlic.
  3. Spread the mixture on a baking sheet and roast for 20 minutes.
  4. In a pot, combine roasted vegetables with broth, kale, spinach, peas, salt, pepper, thyme, and lemon juice.
  5. Simmer for 15 minutes, then blend to desired consistency.
  6. Serve hot and enjoy!
