Sweet Potato Casserole

A delicious and comforting sweet potato casserole topped with turkey bacon for a savory twist.

  • 2 pounds sweet potatoes
  • 1/2 cup brown sugar
  • 1/4 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup mini marshmallows
  • 4 slices turkey bacon, cooked and crumbled

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and cube the sweet potatoes, then boil them in water until tender.
  3. Drain the sweet potatoes and mash them in a large bowl.
  4. Add brown sugar, melted butter, vanilla extract, cinnamon, and nutmeg to the mashed sweet potatoes and mix well.
  5. Spread the sweet potato mixture into a baking dish.
  6. Top with mini marshmallows and crumbled turkey bacon.
  7. Bake for 25-30 minutes, or until the marshmallows are golden brown.

Notes

  • For a vegetarian option, you can omit the turkey bacon.
  • Let the casserole cool slightly before serving to help it set.
