Teriyaki Salmon Sushi Bake

Ingredients

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/2 cup rice vinegar
  • 1/4 cup sugar
  • 2 tablespoons soy sauce
  • 1 pound cooked salmon, flaked
  • 1 avocado, sliced
  • 2 green onions, chopped
  • 1 nori sheet, cut into strips
  • Sesame seeds for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Rinse the sushi rice until the water runs clear, then combine it with water in a pot and bring to a boil. Cover and simmer until done.
  3. Mix together rice vinegar, sugar, and soy sauce in a small bowl, then stir into the cooked rice.
  4. In a baking dish, layer the sushi rice and top with flaked salmon, avocado, and green onions.
  5. Bake for 20 minutes until heated through.
  6. Garnish with nori strips and sesame seeds before serving.

Notes

  • Add more toppings like cucumber or spicy mayo for extra flavor.
  • Can be served warm or cold.
