- 1 pound chicken breast, sliced
- 1 tablespoon olive oil
- 1 cup bell peppers, sliced
- 1 cup carrots, julienned
- 1/2 cup green onions, chopped
- 1/2 cup peanuts, chopped
- 1/4 cup peanut butter
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon lime juice
- 1 teaspoon garlic, minced
- Cook the rice noodles according to package instructions, then set aside.
- In a large skillet, heat olive oil over medium heat.
- Add sliced chicken breast and cook until browned and cooked through, about 6-7 minutes.
