  • 1 pound chicken breast, sliced
  • 1 tablespoon olive oil
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 1/2 cup green onions, chopped
  • 1/2 cup peanuts, chopped
  • 1/4 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 1 teaspoon garlic, minced

Instructions

  1. Cook the rice noodles according to package instructions, then set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add sliced chicken breast and cook until browned and cooked through, about 6-7 minutes.
  4. Add bell peppers, carrots, and green onions, and stir-fry for another 3-4 minutes.
  5. In a bowl, whisk together peanut butter, soy sauce, honey, lime juice, and garlic.
  6. Pour the sauce over the chicken and vegetables, then add cooked noodles. Toss to combine.
