Twice Baked Potato

Delicious twice baked potatoes filled with a savory mixture of turkey bacon and chicken ham.

Ingredients

  • 4 large russet potatoes
  • 1 cup cooked turkey bacon, chopped
  • 1 cup cooked chicken ham, diced
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup green onions, sliced
  • 1/4 cup milk
  • 2 tablespoons butter
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and dry the potatoes, then poke holes in them with a fork.
  3. Bake the potatoes for about 1 hour, or until tender.
  4. Allow the potatoes to cool slightly, then cut them in half lengthwise and scoop out the insides into a bowl.
  5. Add turkey bacon, chicken ham, sour cream, cheddar cheese, green onions, milk, butter, salt, and pepper to the bowl and mix well.
  6. Stuff the potato mixture back into the potato skins.
  7. Place the stuffed potatoes on a baking sheet and bake for an additional 15-20 minutes, until heated through and slightly golden.

Notes

  • For extra flavor, add garlic powder or onion powder to the filling.
  • Top with extra cheese before the final baking for a cheesy crust.
