- 4 large russet potatoes
- 1 cup cooked turkey bacon, chopped
- 1 cup cooked chicken ham, diced
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese
- 1/4 cup green onions, sliced
- 1/4 cup milk
- 2 tablespoons butter
- Salt to taste
- Pepper to taste
- Preheat the oven to 400°F (200°C).
- Wash and dry the potatoes, then poke holes in them with a fork.
- Bake the potatoes for about 1 hour, or until tender.
- Allow the potatoes to cool slightly, then cut them in half lengthwise and scoop out the insides into a bowl.
- Add turkey bacon, chicken ham, sour cream, cheddar cheese, green onions, milk, butter, salt, and pepper to the bowl and mix well.
- Stuff the potato mixture back into the potato skins.
- Place the stuffed potatoes on a baking sheet and bake for an additional 15-20 minutes, until heated through and slightly golden.
Notes
- For extra flavor, add garlic powder or onion powder to the filling.
- Top with extra cheese before the final baking for a cheesy crust.
