Twice-Baked Potatoes

A delicious recipe for twice-baked potatoes loaded with turkey bacon and chicken ham.

  • 4 large russet potatoes
  • 1 cup cooked turkey bacon, chopped
  • 1 cup cooked chicken ham, diced
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the potatoes and prick them with a fork. Bake for 45-60 minutes until tender.
  3. Let the potatoes cool slightly, then cut them in half and scoop out the insides, leaving a small border.
  4. In a bowl, mix the potato insides with turkey bacon, chicken ham, sour cream, cheese, green onions, milk, salt, and pepper.
  5. Fill the potato skins with the mixture and place them back in the oven.
  6. Bake for an additional 15-20 minutes until heated through.

Notes

  • Feel free to add your favorite toppings like chives or more cheese.
