Ultimate Twice-Baked Potatoes Loaded

A delicious twist on a classic, these twice-baked potatoes are filled with turkey bacon and chicken ham for a flavorful dish.

  • 4 large russet potatoes
  • 1 cup cooked turkey bacon, chopped
  • 1 cup cooked chicken ham, diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup green onions, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the potatoes, then prick them with a fork. Rub them with olive oil and sprinkle with salt.
  3. Bake the potatoes in the oven for about 45-60 minutes until soft.
  4. Allow the potatoes to cool slightly, then cut them in half and scoop out the insides into a bowl.
  5. Mix the potato insides with turkey bacon, chicken ham, cheddar cheese, sour cream, green onions, garlic powder, salt, and pepper.
  6. Fill the potato skins with the mixture and top with extra cheese if desired.
  7. Bake again for 15-20 minutes until heated through and the tops are golden.

  • Feel free to add other toppings like jalapeños or extra vegetables.
