  • 1 cup sun dried tomatoes, chopped
  • 1 cup coconut milk
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente, then drain.
  2. In a large skillet, heat olive oil over medium heat, then add garlic and sauté until fragrant.
  3. Add chopped sun dried tomatoes and cook for a few minutes.
  4. Pour in the coconut milk and add oregano and red pepper flakes, stirring to combine.
