Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 bell pepper, chopped
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a pot, heat the olive oil over medium heat.
  2. Add the onion and garlic, and sauté until translucent.
  3. Stir in the cumin, chili powder, and bell pepper; cook for a few minutes.
  4. Add the lentils, diced tomatoes, vegetable broth, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 30-35 minutes.
