Instructions

  1. In a blender, combine the corn kernels, milk, egg, and sugar. Blend until smooth.
  2. In a bowl, mix the cornmeal, baking powder, and salt.
  3. Combine the wet and dry ingredients until just mixed.
  4. Heat a non-stick skillet over medium heat and melt some butter.
  5. Pour scoops of the batter onto the skillet and cook until bubbles form on the surface, about 3-4 minutes.
  6. Flip and cook for another 2-3 minutes until golden brown.
  7. Repeat with the remaining batter, adding more butter as necessary.
