Greek Lentil Salad

Ingredients

  • 1 cup lentils
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils under cold water and cook in boiling water for about 20-25 minutes until tender.
  2. In a large bowl, combine the cooked lentils, cherry tomatoes, cucumber, red onion, parsley, and feta cheese.
  3. In a small bowl, whisk together olive oil, red wine vinegar, garlic, salt, and pepper. Pour over the salad.
