  • 2 tablespoons olive oil

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Cook the lentils according to package instructions until tender.
  2. In a skillet, cook turkey bacon until crispy, then chop into pieces.
  3. In a large bowl, combine cooked lentils, bacon, cherry tomatoes, cucumber, and red onion.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Garnish with fresh parsley before serving.
