  • 1 cup marinara sauce

  • 1/4 cup nutritional yeast
  • 1/4 cup fresh basil, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchini lengthwise into thin sheets.
  3. In a bowl, mix the ricotta substitute with Italian seasoning, salt, pepper, and nutritional yeast.
  4. Spread a layer of marinara sauce at the bottom of a baking dish.
  5. Place a spoonful of the ricotta mixture on each zucchini slice and roll it up tight.
  6. Arrange the rolls in the baking dish seam-side down.
  7. Top with remaining marinara sauce and fresh basil.
  8. Bake for 25-30 minutes until heated through.
